Due to a shortage of time, I have done this batch over two days. Feel free to do this, too, if you are short on time. All you need to do is make sure you start a couple of days before you need the food. Say, for example, you need the food Tuesday. Sundays and Mondays are busy. (I'm using my situation as an example.) You only have a little time each of those days. Here's what I did. Start off by boiling the chicken. The chicken I had (boneless, skinless chicken breasts) were frozen, so I had to boil them for an extra long time. Try to notice when they become thawed out in the boiling water, then boil until fully cooked. While the chicken was cooking, I chopped the vegetables into small pieces. I had 1 carrot, a whole package of celery hearts, a bunch of curly parsley, and a decent amount of green beans. I could have used more of the green beans, however, some of them looked rather old, so I picked out the fresher ones. As you finish chopping each vegetable, add them to a bowl. When the chicken is almost fully cooked, add the chopped vegetables to the pot, and stir in. Once the chicken is fully cooked, remove the same from the pot, leaving behind all the vegetables in the water. Bring to boiling, then turn off heat and add instant brown rice. Add as much as you want--just be sure it's enough to soak up all the water. Stir in, cover and let soak while you cut up the chicken. Mix chicken into the rice and vegetables. Cover and let cool completely. You can either put into the fridge overnight, or continue with the process. If continuing, you can cut up the rest of the ingredients while the cooked food is cooling. Next day/step. Peel and chop into bite-sized pieces 5 or 6 pickling cucumbers. Add to bowl. Take 1/2 of a canteloupe, and cut into bite-sized pieces. You can save the other half for yourself. :) Add to bowl. Remove pot of food from the fridge and mix in the cucumbers and cantaloupe pieces. Now it's time to package it up. You can do this all at once, or throughout the day as you find time. I've noticed that, up til now, I have not given any packing advice. I developed my method over time, and wished I had thought of the "brilliant" (NOT!) idea a long time before. I had been packaging it one meal per container. That used a lot of containers! Now I pack two meals, or one day's worth, in on container. Just divide the meals with a layer of waxed paper. Mandy's so camera shy, I decided to use an old picture, for today.
