Good afternoon! Today I'm cooking a new batch of food for Mandy, and since it's a little different, and I've discovered a little trick recently, I decided to post again. So anyway. I started out this morning by putting mini butternut squash, cut in half lengthwise, in a pan with about an inch or so of water, and baking at 350 F for an hour. When that came out of the oven, I let it cool until after lunch. (By the way, Mandy gets a beef jerky bone treat at lunch.) Then, I discarded the seeds and scooped out the squash into a cereal bowl, and mashed it, which was very easy to do, since it was soft. Next, put the meat (hamburger, in this case) in a pot and add seasonings (this is the trick I discovered.) I add some garlic powder, dried basil, and dried oregano. Then cover the pot and let cook while you cut up the vegetables. You'll be surprised at the aroma when you open the pot again! ;) I cut up some of the veggies, and then opened the pot again to stir. Add a little more spices right before you cover it back up again. Cut up remaining veggies and add to meat. Stir, and add a last seasoning. Cover and let cook at a lowered temperature. Cut up one bunch of parsley, and mix with one bag of baby spinach. Add these to the meat and veggies, a little at a time, mixing well. Heat 2 cups water in a dish for 3:10 in microwave. Add 2 cups of rice. Cover and let sit for 5-10 minutes. Mix in the mashed buttercup squash and a little cubed canteloupe, if desired (I had it on hand) with the rice. Add to pot, a little at a time, mixing well. Reward yourself with a cup of hot chocolate (or coffee) and your favorite cookie. Thanks for stopping by!
